  • 3 tablespoons sugar
  • ⅓ cup melted butter
  • 1 (3.4 ounce) box instant lemon pudding
  • 2 cups milk
  • 6 tablespoons lemon juice
  • 8 ounces Cool Whip Whipped Topping
  • 12 ounces fresh raspberries
  • 2 tablespoons sugar (for raspberries)

Instructions

  1. Preheat oven to 350°F.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl; press into a greased pie pan and bake for 9-10 minutes. Let cool.
  3. Whisk together lemon pudding mix and milk until thickened; add lemon juice and fold in Cool Whip.
  4. Blend raspberries with sugar until smooth.
  5. Layer the pie: pour half of the lemon filling into the crust, add raspberry puree, top with remaining lemon filling, and drizzle with more raspberry puree.
  6. Cover and freeze for at least 3 hours.
  7. Thaw slightly before serving.
