  • 1/4 cup milk
  • 2 1/2 tablespoons olive oil
  • 8 ounces fingerling potatoes
  • 1 medium red pepper
  • 1 cup baby spinach
  • 1/2 cup diced red onions
  • 2 cloves garlic
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, and add black pepper.
