- 1 ½ lbs beef chuck
- 5 large onions
- 4 garlic cloves
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 ½ cups beef broth
- 1 white baguette
- 1 ½ cups shredded Gruyère cheese
- Fresh thyme
Instructions
- Slice onions thinly using a sharp knife or mandoline.
- Season beef cubes with salt and pepper; sear in a Dutch oven until browned. Remove from pot.
- In the same pot, melt butter; add onions, brown sugar, and salt. Cook until golden brown.
- Add garlic and thyme; cook for an additional five minutes.
- Stir in flour, then gradually add beef broth while scraping the pot's bottom.
- Return beef to pot with bay leaves; bring to a simmer, cover, and transfer to a preheated oven at 320°F (160°C). Cook for about 1½ hours.
- For the bread topping: Preheat oven to 375°F (190°C), slice baguette, brush with olive oil, and toast until golden brown.
- Assemble by spreading Dijon mustard on toasted bread and topping with cheeses; place on top of stew in ovenproof bowls and broil until cheese melts.
