- 1/2 tsp Vanilla extract
- 1/2 cup Lemon juice
- 2 tbsp Lemon zest
- 1 cup Granulated sugar
- 1/4 tsp Kosher salt
- 2 Eggs (large)
- 4 Egg yolks (large)
Instructions
- In a food processor, combine flour, powdered sugar, and salt. Add cold butter and blend until pea-sized pieces form. Mix in the egg and vanilla extract until a dough forms; avoid overmixing.
- Chill the dough wrapped in plastic wrap for at least one hour.
- Roll out the chilled dough on a floured surface into a circle. Transfer to a 9-inch tart pan, trimming excess edges, and prick holes in the base. Freeze for 20 minutes.
- Preheat oven to 350°F (180°C) and bake crust for 15-20 minutes until lightly golden brown. Let cool.
- Prepare the lemon curd by whisking together lemon juice, zest, granulated sugar, butter, eggs, and yolks over low heat until thickened (about 10-15 minutes). Pour into the cooled crust and refrigerate until set.
