  • 1/4 tsp Kosher salt
  • 1/3 cup Powder sugar
  • 1/2 cup Butter (cold, unsalted)
  • 1 Egg (large)
  • 1/2 tsp Vanilla extract
  • 1/2 cup Lemon juice
  • 2 tbsp Lemon zest
  • 1 cup Granulated sugar
  • 1/4 tsp Kosher salt
  • 2 Eggs (large)
  • 4 Egg yolks (large)

Instructions

  1. In a food processor, combine flour, powdered sugar, and salt. Add cold butter and blend until pea-sized pieces form. Mix in the egg and vanilla extract until a dough forms; avoid overmixing.
  2. Chill the dough wrapped in plastic wrap for at least one hour.
  3. Roll out the chilled dough on a floured surface into a circle. Transfer to a 9-inch tart pan, trimming excess edges, and prick holes in the base. Freeze for 20 minutes.
  4. Preheat oven to 350°F (180°C) and bake crust for 15-20 minutes until lightly golden brown. Let cool.
  5. Prepare the lemon curd by whisking together lemon juice, zest, granulated sugar, butter, eggs, and yolks over low heat until thickened (about 10-15 minutes). Pour into the cooled crust and refrigerate until set.
