Ingredients

  • 2 medium-sized whole oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios (finely ground)
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Thoroughly wash the oranges and boil them in water for about 30 minutes until soft. Allow to cool.
  2. Cut the cooled oranges in half, remove any seeds, and blend into a smooth puree using a food processor.
  3. In the food processor, combine the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt until well mixed.
  4. In a separate bowl, whisk the eggs until frothy, then gradually mix in the orange-nut mixture to form a smooth batter.
  5. Preheat your oven to 180°C (350°F) and prepare a 9-inch round cake pan by greasing or lining it with parchment paper.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
