- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, sliced into half-moons
- 1 red onion, sliced into wedges
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the bell peppers and zucchini; slice the red onion. Combine in a large bowl.
- Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss to coat.
- Spread veggies on a parchment-lined baking sheet and roast for 25-30 minutes until golden.
- In a small bowl, whisk together maple syrup and Dijon mustard until smooth.
