  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced into half-moons
  • 1 red onion, sliced into wedges
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the bell peppers and zucchini; slice the red onion. Combine in a large bowl.
  3. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss to coat.
  4. Spread veggies on a parchment-lined baking sheet and roast for 25-30 minutes until golden.
  5. In a small bowl, whisk together maple syrup and Dijon mustard until smooth.
  6. Once veggies are roasted, mix them with chickpeas and drizzle with the dressing before serving.
