  • ¼ cup panko breadcrumbs
  • 2 cloves garlic (minced)

  • ¼ cup fresh mint (chopped)
  • 1 large egg
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground turkey, panko breadcrumbs, garlic, onion, parsley, mint, egg, salt, and pepper until just combined.
  3. Form small meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and fully cooked.
  5. Prepare bowls with cooked quinoa or rice topped with cherry tomatoes and cucumber.
  6. Whisk together olive oil and lemon juice; drizzle over the bowls before serving.
