  • 1 pound boneless, skinless chicken breasts
  • 1 yellow onion
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 2 cans great northern beans
  • 2 cans diced green chilies
  • 1 can whole kernel corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • A small handful of fresh cilantro, chopped
  • 1/2 cup reduced-fat cream cheese, softened
  • 1/4 cup half-and-half cream

Instructions

  1. Chop the onion and garlic; rinse and drain the beans.
  2. In the slow cooker, combine chicken breasts, onion, garlic, broth, beans, green chilies, corn, salt, black pepper, cumin, oregano, chili powder, and cayenne pepper. Stir well.
  3. Cover and cook on low for about 3 hours until the chicken is tender.
  4. Shred the chicken using forks and return it to the pot.
  5. Stir in softened cream cheese and half-and-half until incorporated; heat for an additional 10-15 minutes.
