- 1 large leek (white part only), finely chopped
- 1 medium carrot, chopped
- 5 medium potatoes, peeled and cubed (about 400 g)
- 1.25 liters fish stock
- 450 g salmon fillets, skinned and cubed
- 150 ml double cream
- 1 bunch dill, roughly chopped
- Salt and pepper to taste
Instructions
- In a large heavy-bottomed pot, melt the butter over medium heat. Add the chopped leek and sauté for about 7-8 minutes until softened.
- Stir in the chopped carrot and potatoes, then pour in the fish stock to cover the vegetables. Cook for approximately 10 minutes until the potatoes are nearly fork-tender.
- Add the salmon cubes and double cream to the pot. Simmer gently for about 3-4 minutes until the salmon is cooked through.
- Mix in the chopped dill and let simmer for another minute. Season with salt and pepper before serving.
