Ingredients
- 1/4 cup unsalted butter (softened)
- 3 cloves garlic (minced)
- 3 sprigs rosemary (destemmed and minced)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 fryer chicken (broken into 6 or 8 pieces)
- 1/2 cup balsamic vinegar
- 1/2 cup fig preserves
Instructions
- Preheat oven to 425°F (218°C).
- In a small bowl, mix softened butter with half of the garlic, rosemary, salt, and pepper.
- Rub the butter mixture generously over chicken pieces in a cast iron skillet.
- Roast chicken in the preheated oven for about 10 minutes.
- Whisk together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper; brush most of the sauce over chicken.
- Continue roasting while basting every 10 minutes until chicken reaches an internal temperature of 165°F (74°C), about 25 minutes total.
- Allow to rest before serving.
