Ingredients
- 2 cups milk
- 8 large eggs
- 3 stalks green onions, chopped
- 1 tsp onion powder
- 1 tsp salt
- ¾ lb Canadian bacon, diced
- 6 English muffins, diced
- ½ tsp paprika
- 1 cup milk (for hollandaise)
- 1 packet hollandaise sauce mix
- ¼ cup butter
- Fresh parsley for garnish
Instructions
- Grease a 9×13 baking dish.
- In a mixing bowl, whisk together milk, eggs, green onions, onion powder, and salt until well blended.
- Layer half of the diced Canadian bacon in the greased dish. Spread all of the diced English muffins over it and add the remaining bacon on top.
- Pour the egg mixture evenly over all layers.
- Cover and refrigerate overnight.
- Preheat oven to 375°F (190°C). Bake covered for 30 minutes; remove cover and bake for an additional 15 minutes until golden brown.
- Meanwhile, prepare hollandaise sauce by combining milk, sauce mix, and butter in a saucepan over medium heat until thickened.
- Slice the casserole and drizzle with warm hollandaise sauce. Garnish with parsley if desired.
