  • 1 large eggplant (sliced into rounds)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Slice the eggplant into rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  2. In a mixing bowl, combine flour, baking powder, garlic powder, onion powder, Italian seasoning, and salt.
  3. Dip each eggplant slice into the batter until evenly coated.
  4. Heat oil in a frying pan over medium heat until hot but not smoking.
  5. Fry the battered eggplant slices in batches until golden brown on both sides; drain on paper towels.
  6. Spread warm marinara sauce on each pakora and top with mozzarella cheese. Return to the pan briefly to melt the cheese.
