  • 1 lb lean ground turkey
  • 1 medium onion
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup corn
  • 1 cup canned black beans
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or cheddar)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a baking dish with olive oil.
  2. Halve the bell peppers, remove seeds and ribs, then brush with olive oil and season with salt and pepper. Bake for 15 minutes.
