  • 1 cup long-grain rice (white or brown)
  • 2 cups low-sodium chicken broth
  • 1 cup queso cheese sauce
  • 1 cup chopped bell peppers (mix of red and green)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh cilantro (for garnish)

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers, and mincing the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté the onions and bell peppers until softened (about 5 minutes), adding garlic for the last minute.
