Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup long-grain rice (white or brown)
- 2 cups low-sodium chicken broth
- 1 cup queso cheese sauce
- 1 cup chopped bell peppers (mix of red and green)
- 1 small onion, diced
- 2 cloves garlic, minced
- ¼ cup chopped fresh cilantro (for garnish)
Instructions
- Prepare your ingredients by chopping the onion and bell peppers, and mincing the garlic.
- In a large pot over medium heat, add a splash of olive oil. Sauté the onions and bell peppers until softened (about 5 minutes), adding garlic for the last minute.
- Season chicken breasts with salt and pepper; place in the pot and sear each side until golden brown (about 4 minutes per side).
- Stir in rice and chicken broth, scraping any bits off the bottom of the pot. Bring to a simmer.
- Lower heat and mix in queso cheese sauce until combined. Cover and let everything simmer on low for about 20 minutes or until rice is tender.
- Serve hot, sprinkled with fresh cilantro.
