Ingredients

  • 1 lb elbow macaroni
  • 6 oz cheddar cheese (cubed)
  • 1/2 red onion (minced)
  • 4 celery stalks (diced)
  • 1 red bell pepper (diced)
  • 1 cup frozen peas
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh dill
  • 2 tablespoons sugar
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook macaroni in boiling water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cooked pasta with cubed cheddar, minced onion, diced celery, diced bell pepper, and frozen peas.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, dill, sugar, Dijon mustard, salt, and pepper until smooth.
  4. Pour dressing over the pasta mixture and toss to coat evenly.
  5. Cover with plastic wrap and refrigerate for at least one hour before serving.
