  3. Place the bowl over simmering water and whisk continuously for 20-25 minutes until thickened.
  4. Strain the curd through a fine mesh sieve into a glass bowl for smoothness.
  5. Cover with plastic wrap directly on the surface to prevent skin formation as it cools.
  6. Allow it to cool at room temperature before refrigerating for at least 4 hours.
