Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup chow mein noodles
  • 1 1/2 cups milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix flour, cocoa powder, and salt in a bowl. In another bowl, beat butter and sugars until fluffy. Add egg and vanilla; mix well.
  3. Combine dry ingredients with wet until a soft dough forms. Scoop tablespoon-sized portions onto the baking sheet and flatten into disks. Bake for 8–10 minutes; let cool completely.
  4. For nests, melt chocolate chips in a microwave-safe bowl. Coat chow mein noodles in melted chocolate.
  5. Shape chocolate-coated noodles into nests on cooled cookies and let set at room temperature.
  6. Fill nests with melted chocolate and press candy eggs into the center.
