  • 1/2 cup sweetened condensed milk (or condensed coconut milk for dairy-free)
  • 1/2 cup small tapioca pearls
  • 13.5 oz full-fat coconut milk

Instructions

  1. In a large pot, bring 5 cups of water to a boil. Add the tapioca pearls and cook for 10 minutes on medium heat. Turn off the heat and let them soak until translucent.
  2. Strain the cooked tapioca using a fine mesh sieve and rinse under cold water.
  3. In a bowl, combine the rinsed tapioca with room-temperature coconut milk.
  4. Blend 17.6 oz strawberries with sweetened condensed milk until smooth.
  5. Mix the strawberry blend into the tapioca-coconut mixture and adjust sweetness if desired.
