Ingredients
- 1 can coconut milk (13.5 fl oz / 400ml)
- 2–3 tablespoons red curry paste
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 large garlic clove
- 1 small cube of ginger
- 16–20 frozen veggie dumplings
- 2 bok choy bulbs
- 1 zucchini
Instructions
- In a large baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk until smooth.
- Grate in garlic and ginger for added flavor.
- Preheat oven to 400°F (200°C). Chop bok choy and slice zucchini; add to the baking dish and mix thoroughly.
- Arrange frozen dumplings evenly on top of the mixture without overlapping. Press them slightly into the broth.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and continue baking for an additional 5-10 minutes until bubbly and golden.
