Ingredients

  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • Pinch of salt
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a mixing bowl, whisk together flour, cornstarch, sugar, and salt. Add vegetable oil and water; mix until smooth. Let rest for about 30 minutes.
  2. Heat a nonstick pan over medium-low heat. Use a squeeze bottle to pipe thin strands of batter into circular motions on the hot surface. Cook until set but pale.
  3. In a microwave-safe bowl, melt white chocolate with double cream until smooth. Blend ground pistachios with salt to create a paste; mix with the melted chocolate.
  4. In the same pan, melt butter and toast kataifi strands until golden and crispy. Combine toasted kataifi with the pistachio cream mixture.
  5. Chill the mixture until firm, then roll into balls.
  6. Melt milk chocolate in the microwave; dip each ball into melted chocolate and garnish with chopped pistachios before placing on parchment paper.
