Ingredients

  • 250 grams medium wide rice noodles (dried)
  • 250 grams chicken thighs or chicken breast
  • 3 tablespoons vegetable or canola oil
  • 1 tablespoon minced garlic
  • 1/2 onion (sliced)
  • 23 Thai red chili peppers
  • 45 baby bok choy
  • 1 cup holy basil
  • 3 teaspoons soy sauce
  • 1.5 teaspoons dark soy sauce
  • 2 teaspoons oyster sauce
  • 1 tablespoon + 1 teaspoon fish sauce
  • 2 teaspoons brown sugar
  • Pinch ground white pepper
  • 1/4 cup chicken stock or water

Instructions

  1. Marinate sliced chicken with soy sauce for 15-20 minutes.
  2. Cook rice noodles per package instructions; drain and set aside.
  3. Prepare baby bok choy and holy basil.
  4. Mix sauce ingredients in a bowl.
  5. Heat oil in a wok; sear marinated chicken until cooked through; remove from pan.
  6. Sauté onion, garlic, and chili peppers in the same pan.
  7. Add bok choy and stir-fry briefly.
  8. Combine noodles, chicken, basil, and sauce; stir-fry until well mixed and slightly charred.
  9. Serve hot with garnishes like green onions.
