  • 1 egg

  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • For the Icing: 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into fine powder using a blender.
  3. In a mixing bowl, cream together room temperature butter and sugar until fluffy; add egg and vanilla.
  4. Gradually incorporate flour, baking soda, strawberry powder, and salt; stir in strawberry jam.
  5. Roll dough into small balls and place on the prepared baking sheet.
  6. Bake for about 8 minutes, flatten slightly, then bake an additional 2-3 minutes until golden.
  7. For icing: mix cream cheese, powdered sugar, hot milk, remaining strawberry powder until smooth.
  8. Once cookies cool, dip or drizzle icing over them.
