- 1 tbsp fresh ginger, finely grated
- 4 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp vegetable oil
Instructions
- Preheat a large skillet or wok over medium-high heat and add vegetable oil.
- Cut chicken into bite-sized pieces. Stir-fry until golden brown (about 5 minutes).
- Add minced garlic and grated ginger; stir until fragrant (about 30 seconds).
- Incorporate the sliced bell peppers and broccoli; stir-fry for another 3 minutes until tender-crisp.
- Pour in soy sauce and chicken broth. Mix cornstarch with water until smooth; add to the pan while stirring to thicken the sauce.
- Serve hot over steamed rice or noodles, garnished with sesame seeds or green onions if desired.
