Ingredients

  • 2 ripe mangoes, diced
  • 1 red bell pepper, chopped
  • 1 cucumber, diced

  • Salt & pepper to taste

Instructions

  1. Preheat your grill or stovetop pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill for 5-7 minutes on each side until golden brown and cooked through.
  2. While the chicken cools, chop the mangoes, bell pepper, cucumber, and green onions into bite-sized pieces.
  3. In a small bowl, whisk together lime juice and olive oil; season with salt and pepper.
  4. Once cooled slightly, slice the chicken against the grain. In a large bowl, combine mangoes, bell pepper, cucumber, green onions, and sliced chicken. Drizzle with dressing and toss gently.
