- 4 large Russet potatoes
- 1 lb boneless, skinless chicken breasts (about 3 breasts)
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 4 green onions, chopped
- 1 oz ranch seasoning mix (1 packet)
- ½ cup chicken broth
Instructions
- Preheat your oven to 400°F (200°C). Wash the potatoes and poke holes in them with a fork.
- Wrap each potato in aluminum foil and bake directly on the oven rack for 45-60 minutes until soft.
- While the potatoes are baking, season the chicken breasts with salt and pepper. Cook in a skillet over medium heat until golden brown, about 6-8 minutes per side. Shred or chop the chicken.
- In a mixing bowl, combine shredded chicken, cream cheese, cheddar cheese, green onions, ranch seasoning mix, and chicken broth; mix until well combined.
- Once baked, slice the potatoes open lengthwise without cutting all the way through. Fluff the insides with a fork and stuff generously with the chicken mixture.
