Ingredients

  • 3 ½ cups fresh ginger (peeled)
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. In a large pot, combine ginger and water, then simmer gently for 1 hour and 15 minutes. Drain mixture, reserving ½ cup cooking liquid.
  3. Chill the ginger in the refrigerator for at least 4 hours.
  4. In a pot, mix chilled ginger, reserved liquid, and sugar; bring to a boil for 1 minute.
  5. Stir in pectin and simmer for another 7 minutes while skimming foam.
  6. Sterilize canning jars by boiling them in water.
  7. Fill each jar with marmalade, leaving ¼ inch space at the top; wipe rims clean before sealing.
  8. Process jars in boiling water for about 15 minutes.
  9. Allow jars to cool completely before storing.
