  • 1/4 cup granulated sugar (for crust)
  • 1/3 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips, melted
  • 2 cups fresh or frozen cherries, pitted (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, combine chocolate cookie crumbs, sugar, and melted butter; press into the bottom of the pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, then mix in eggs one at a time. Stir in vanilla extract and melted dark chocolate.
  4. Pour the filling over the crust and bake for 50-60 minutes until slightly jiggly in the center. Turn off the oven and let it cool inside with the door ajar for an hour.
  5. Cool completely at room temperature and refrigerate for at least 4 hours or overnight.
  6. For the cherry topping, cook cherries with sugar, cornstarch, and water until thickened; allow to cool before spreading on chilled cheesecake.
