  • 2 yellow onions
  • 2 poblano peppers
  • 28 oz crushed fire-roasted tomatoes
  • 8 oz tomato paste
  • 3 tbsp salted butter
  • 6 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (4 ounce) diced green chilies
  • 1/3 cup hot sauce
  • 2 bay leaves
  • salt to taste
  • 23 cups chicken or beef broth
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • avocado and Greek yogurt, for serving
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Chop onions and poblano peppers; measure spices.
  2. In a skillet, brown the meat until fully cooked.
  3. Combine browned meat and chopped veggies in a crockpot along with crushed tomatoes, tomato paste, spices, butter, and broth.
  4. Set the slow cooker on low for about 120 minutes.
  5. Stir in cream cheese and cheddar until melted.
  6. Serve hot with desired toppings.
