  • 1 lb. boneless, skinless chicken breasts/thighs
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)
  • 8 oz. softened cream cheese
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp lime juice

Instructions

  1. In your slow cooker, combine all ingredients except for the chicken; stir well.
  2. Add the chicken on top of the mixture and cover it with the sauce.
  3. Cook on low heat for 7 hours or high heat for 4 hours until the chicken is tender.
  4. Once cooked, shred the chicken with two forks and mix it into the chili before serving.
