Ingredients
- 1 lb. boneless, skinless chicken breasts/thighs
- 2 cups chicken broth
- 1 cup chopped onion
- 3 cloves minced garlic
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans (drained)
- 1 (15 oz.) can great northern beans (drained)
- 8 oz. softened cream cheese
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp lime juice
Instructions
- In your slow cooker, combine all ingredients except for the chicken; stir well.
- Add the chicken on top of the mixture and cover it with the sauce.
- Cook on low heat for 7 hours or high heat for 4 hours until the chicken is tender.
- Once cooked, shred the chicken with two forks and mix it into the chili before serving.
