Ingredients
- 2 pounds russet potatoes, peeled and sliced thinly
- 1 pound ribeye steak or sirloin, thinly sliced (or ground beef)
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup beef broth
- 2 cups shredded provolone cheese
- Olive oil for browning
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef for about 4-5 minutes until just cooked through. Season with garlic powder, onion powder, salt, and pepper.
- Slice the onion and bell pepper into thin strips.
- Layer half of the sliced potatoes in the bottom of your slow cooker, followed by half of the cooked beef, half of the onions and bell peppers, and half of the cheese. Repeat these layers.
- In a mixing bowl, combine cream of mushroom soup, sour cream, and beef broth until smooth. Pour over layered ingredients in the slow cooker.
- Cover and cook on low for 6 hours or high for 3 hours. Add remaining cheese during the last 30 minutes of cooking.
- Once done, stir gently before serving.
