  • 2 bay leaves
  • 3 large yellow onions, thinly sliced
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons unsalted butter
  • 1 1/2 cups beef broth (low-sodium preferred)
  • 1/2 cup dry white apple vinegar (or more broth)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch + 3 tablespoons cold water
  • 1 cup shredded Gruyère or Swiss cheese (optional)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Peel and thinly slice the yellow and sweet onions; mince the garlic.
  2. In the slow cooker, combine onions, garlic, brown sugar, and balsamic vinegar. Cook on high for 20–30 minutes until softened.
  3. Pat the chuck roast dry and season with salt and pepper. Sear in a skillet for 2–3 minutes per side until browned.
  4. Add seared roast to the crock pot atop caramelized onions along with thyme and bay leaves.
  5. Pour in beef broth and ensure the roast is partially submerged.
  6. Cook on low for 8–9 hours or high for 5–6 hours until fork-tender.
  7. For a thicker gravy, mix cornstarch with cold water and stir into the cooking liquid, cooking on high without a lid for an additional 10–15 minutes.
