  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • Oil for searing
  • Optional: 2 lbs potatoes
  • Optional: 1 lb carrots
  • Optional: 1 yellow onion

Instructions

  1. Season the roast generously with oil, steak seasoning, and thyme on both sides.
  2. Heat a skillet over high heat and sear the roast for 2-3 minutes on each side to develop flavor.
  3. Pour beef broth into the skillet to deglaze, scraping up any flavorful bits before transferring everything to your slow cooker.
  4. If using vegetables, prepare them by cutting into large pieces and mixing with oil and seasonings before placing them in the slow cooker on top of the roast.
  5. Cover and cook on low for 7-8 hours or high for 3.5-4 hours until fork-tender.
  6. Before serving, thicken gravy by dissolving cornstarch in water and adding it to the slow cooker.
