- 200 grams dried pasta (or 300 grams fresh pasta)
- 1 chicken breast
- 1 tablespoon flour
- 1 tablespoon butter
- 3 cloves garlic (finely chopped)
- 1 tablespoon fresh rosemary leaves (roughly chopped)
- ¾ cup cream
- 50 grams parmesan (very finely grated)
- Salt and pepper to taste
- Olive oil for frying
- Lemon juice and zest for garnish
Instructions
- Cook the pasta in salted boiling water, undercooking by one minute. Reserve a cup of pasta water before draining.
- Flatten the chicken breast to ensure even cooking. Season with salt and pepper, then dust with flour.
- Heat olive oil in a fry pan over medium-high heat and fry the chicken for about 2 minutes on each side until cooked through. Wrap in foil to keep warm.
- In the same pan, melt butter over medium heat and sauté garlic until fragrant. Add rosemary and cook briefly.
- Slowly pour in cream, stirring to combine, then add parmesan gradually until melted. Mix in black pepper and lemon juice.
- Stir in reserved pasta water and simmer for 2-3 minutes to thicken the sauce.
- Toss cooked pasta into the sauce mixture and stir gently for one or two minutes.
- Serve sliced chicken on top or mixed through the pasta, garnished with lemon zest and extra rosemary.
