  • 6 celery stalks
  • 1/4 cup dried cranberries
  • 1/4 cup pecans
  • 1 teaspoon Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons red apple vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the vinaigrette by combining Dijon mustard, maple syrup, red apple vinegar, olive oil, salt, and pepper in a jar. Shake until blended.
  2. Toast the pecans in a dry skillet over medium heat for about 3–4 minutes until fragrant.
  3. In a large bowl, mix sliced celery, chopped apple, dried cranberries, and half of the toasted pecans. Season lightly with salt and pepper.
