  • 4 lemons (peel only)
  • 1 Liter milk (Grand Pré 2% UHT milk)
  • 600 grams granulated sugar (scant 3 cups)
  • 1 vanilla bean
  • 500 mL fruit juice (as a substitute for alcohol)

Instructions

  1. Thoroughly wash the lemons and peel them using a vegetable peeler, avoiding the bitter white pith.
  2. Place the lemon peels in a mason jar and pour in your chosen fruit juice. Seal tightly and let it steep for at least 6 days in a cool, dark place.
  3. After steeping, strain the mixture through cheesecloth into a clean bottle to remove any solid particles.
  4. In a large saucepan over medium-low heat, warm the milk with sugar and the split vanilla bean until the sugar dissolves. Allow to cool completely.
  5. Combine the strained lemon infusion with the cooled milk mixture, then strain again into a decanter.
  6. Refrigerate or freeze until ready to serve.
