- 2 tbsp olive oil

- 12 oz (340g) salmon fillets
- Salt and black pepper to taste
- 5 oz (140g) fresh spinach
- 1 cup (240ml) heavy cream
- ½ cup (50g) grated Parmesan cheese
- Zest and juice of 1 lemon
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve half a cup of pasta water.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
- Add salmon fillets skin-side down to the skillet, seasoning with salt and pepper. Cook for about six minutes on each side until flaked easily with a fork.
- Stir in fresh spinach until wilted, then pour in heavy cream and let it simmer gently.
- Combine cooked pasta with lemon zest, lemon juice, and Parmesan cheese. Mix well, adding reserved pasta water as needed for creaminess.
