  • 8 oz (225g) spaghetti or fettuccine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 12 oz (340g) salmon fillets
  • Salt and black pepper to taste
  • 5 oz (140g) fresh spinach
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • Zest and juice of 1 lemon

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve half a cup of pasta water.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
  3. Add salmon fillets skin-side down to the skillet, seasoning with salt and pepper. Cook for about six minutes on each side until flaked easily with a fork.
  4. Stir in fresh spinach until wilted, then pour in heavy cream and let it simmer gently.
  5. Combine cooked pasta with lemon zest, lemon juice, and Parmesan cheese. Mix well, adding reserved pasta water as needed for creaminess.
  6. Serve garnished with extra Parmesan cheese and black pepper.
