  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained (sliced or whole)

Instructions

  1. Season chicken strips with salt and pepper.
  2. In a large skillet, melt butter over medium-high heat and cook chicken until browned on all sides. Remove and set aside.
  3. Sauté onions and garlic in the same skillet until fragrant.
  4. Add chicken stock and roasted red peppers; reduce by half.
  5. Stir in heavy cream and Parmesan until smooth.
  6. Return heat to medium; add Italian seasoning and pepperoncini.
  7. Mix in browned chicken; simmer until cooked through and sauce thickens.
  8. Serve hot over rice, pasta, or vegetables.
