  • ¾ cup unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • 2 large eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for the crust)
  • ½ teaspoon salt
  • ½ cup granulated sugar (for the filling)
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, flour, sugar, and salt. Mix in melted butter until combined.
  3. Press two-thirds of this mixture into the bottom of the prepared pan.
  4. In another bowl, beat softened cream cheese until creamy; add sugar and mix well. Incorporate eggs one at a time followed by lemon zest and juice.
  5. Pour filling over crust and sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature for one hour then refrigerate for at least three hours before slicing.
