  • 1 pound boneless, skinless chicken breast, diced

  • 4 slices bacon, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups uncooked penne pasta (or any short pasta)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian herbs
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy (about 5-7 minutes). Remove and set aside.
  2. In the same skillet with drippings, season and sauté the diced chicken until browned (6-8 minutes). Remove from skillet.
  3. Add minced garlic to the skillet and sauté until fragrant (30 seconds). Pour in chicken broth while scraping up any bits.
  4. Stir in uncooked pasta along with paprika and herbs. Bring to a simmer and cover; cook according to package instructions until al dente.
  5. Reduce heat and stir in heavy cream, cooked chicken, and spinach until combined.
  6. Mix in the reserved crispy bacon before serving.
