  • 4 boneless, skinless chicken breasts (about 1.5 lbs total)
  • 1 cup orzo pasta
  • 4 oz Boursin cheese (garlic & herbs flavor recommended)
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, sauté minced garlic for about one minute until fragrant.
  3. Add chicken broth and bring to a gentle boil. Stir in orzo and cook according to package instructions (about 8 minutes) until al dente.
  4. Add spinach and cherry tomatoes during the last minute of cooking, allowing spinach to wilt.
  5. Off the heat, stir in Boursin cheese until melted and creamy.
  6. Slice chicken and serve atop the orzo mixture, drizzled with extra olive oil if desired.
