Ingredients

  • 1/3 cup shallots (finely chopped)
  • 3 cloves garlic (minced)
  • 2 cups heavy whipping cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper (freshly ground)
  • 1 pinch nutmeg
  • 1/2 cup Parmigiano-Reggiano cheese (grated)
  • 2 pounds frozen cut leaf spinach (thawed and squeezed dry)

Instructions

  1. Thaw the frozen spinach and squeeze out excess water.
  2. In a heavy-bottomed pot, melt the butter over medium-low heat. Sauté shallots until soft, then add minced garlic.
  3. Pour in the heavy cream along with salt, pepper, and nutmeg. Bring to a low boil and cook until thickened.
  4. Stir in the grated cheese until melted, then add the spinach and mix thoroughly.
