Ingredients

Scale
  • 8 tablespoons unsalted butter
  • ½ cup water
  • ½ cup whole milk
  • ¼ teaspoon salt
  • 2 teaspoons sugar
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine butter, water, milk, salt, and sugar until bubbling. Add flour all at once and stir until a dough forms.
  3. Allow the dough to cool slightly before mixing in beaten eggs gradually until fully incorporated.
  4. Pipe mounds of dough onto the prepared baking sheet and brush lightly with egg wash.
  5. Bake for 20 minutes at 400°F without opening the oven door, then reduce temperature to 350°F (175°C) and bake for an additional 10 minutes.
  6. Cool on a wire rack and prepare the filling by whipping heavy cream with vanilla extract and sugar until stiff peaks form.
  7. Slice cooled puffs horizontally, fill generously with whipped cream, dust with powdered sugar, and serve.
