  • 3 to 5 pounds ribeye roast
  • Salt to taste
  • 1/2 cup balsamic vinegar
  • 2 garlic cloves (minced)
  • 1/4 cup cranberry sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 1/2 cup beef broth
  • 2 cups cranberries
  • Fresh thyme sprigs

Instructions

  1. Prepare the marinade by combining balsamic vinegar, minced garlic, cranberry sauce, brown sugar, red pepper flakes, salt, and olive oil in a large resealable bag.
  2. Pierce the ribeye roast all over and place it in the marinade bag. Seal tightly and refrigerate overnight.
  3. Preheat your oven to 350°F (175°C).
  4. Remove the roast from the marinade and wipe off excess marinade. Sear in a hot cast iron pan with vegetable oil until golden brown on all sides.
  5. Pour in reserved marinade and beef broth, then add cranberries and thyme before transferring to the oven.
  6. Roast for approximately 20 minutes per pound or until internal temperature reaches 140°F (60°C) for medium-rare.
  7. Let rest for at least 15 minutes before carving.
