Cranberry Apple Twice-Baked Sweet Potatoes are a festive and nutritious side dish that perfectly blends the sweetness of roasted sweet potatoes with the tartness of fresh cranberries and the crunch of apples.

  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake washed sweet potatoes on a lined baking sheet for 45-60 minutes until tender.
  3. In a mixing bowl, combine chopped apples, cranberries, brown sugar, cinnamon, salt, and butter; mash together lightly.
  4. Cut baked sweet potatoes in half lengthwise and scoop out some flesh into the mixture.
  5. Mix well and spoon filling back into the potato skins.
  6. Return to oven at 350°F (175°C) for an additional 15-20 minutes until heated through.
