- 1 cup fresh cranberries
- 2 medium apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Bake washed sweet potatoes on a lined baking sheet for 45-60 minutes until tender.
- In a mixing bowl, combine chopped apples, cranberries, brown sugar, cinnamon, salt, and butter; mash together lightly.
- Cut baked sweet potatoes in half lengthwise and scoop out some flesh into the mixture.
- Mix well and spoon filling back into the potato skins.
- Return to oven at 350°F (175°C) for an additional 15-20 minutes until heated through.
