- 3–4 boneless, skinless chicken breasts, diced
- 1 cup sweet corn kernels (fresh or frozen)
- 1 ½ cups long grain rice (jasmine or basmati), cooked
- 1/2 cup chicken broth (low-sodium)
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Sauce:
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup (adjust to taste)
Instructions
- Cook the Rice:
Prepare rice according to package instructions. Fluff and set aside. - Sauté the Chicken:
In a large skillet or pan, heat olive oil over medium heat. Add diced chicken, season lightly with salt and pepper, and cook until browned and cooked through (about 6–8 minutes). Remove and set aside. - Add Garlic & Corn:
In the same pan, add minced garlic and sauté for 30 seconds. Add corn and stir for 2–3 minutes until heated through. - Combine with Chicken & Broth:
Return chicken to the pan, add chicken broth, and stir to combine. Simmer for 2–3 minutes. - Add the Sauce:
Stir in soy sauce and honey (or maple syrup). Let everything simmer for another 2–3 minutes until slightly thickened and well coated. - Assemble the Bowls:
Spoon cooked rice into bowls, top with the chicken-corn mixture, and garnish with chopped green onions. - Serve Hot:
