  • 1 lb ground beef or turkey
  • 4 cups shredded green cabbage
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef or turkey with minced garlic, diced onion, thyme, oregano, salt, and pepper. Shape into small meatballs (about 1 inch).
  2. In a large pot over medium heat, add a splash of vegetable broth. Sauté the diced onion until translucent. Add minced garlic and cook for another minute.
  3. Add the meatballs to the pot and brown them on all sides for about five minutes.
  4. Pour in the vegetable broth along with shredded cabbage and diced carrots. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Taste and adjust seasoning as desired before serving hot with crusty bread.
