- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/4 cup honey
- 8 cloves garlic
- 1 bunch cilantro
- Juice of ½ lime
- 2 tsps chipotle powder
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 2 tsps salt
- 1/2 tsp pepper
Instructions
- In a blender or food processor, combine chipotle peppers, olive oil, red wine vinegar, honey, lime juice, cilantro, garlic, and spices. Blend until smooth.
- Place the steak in a large bowl and pour the marinade over it. Ensure the steak is well coated and reserve 1/4 cup of the marinade for later.
- Heat a skillet over high heat with a little oil. Remove excess marinade from the steak and sear each side for about 3-4 minutes until browned.
- Let the steak rest briefly before slicing thinly against the grain. Add cubed steak back to the skillet with reserved marinade to warm through.
