  • 1 can (7oz) chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • Juice of ½ lime
  • 2 tsps chipotle powder
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 tsps salt
  • 1/2 tsp pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, olive oil, red wine vinegar, honey, lime juice, cilantro, garlic, and spices. Blend until smooth.
  2. Place the steak in a large bowl and pour the marinade over it. Ensure the steak is well coated and reserve 1/4 cup of the marinade for later.
  3. Heat a skillet over high heat with a little oil. Remove excess marinade from the steak and sear each side for about 3-4 minutes until browned.
  4. Let the steak rest briefly before slicing thinly against the grain. Add cubed steak back to the skillet with reserved marinade to warm through.
  5. Serve with your choice of tortillas or sides like rice and beans.
