- 1 cup all-purpose flour (spooned and leveled)
- 3/4 cup cake flour (spooned and leveled)
- 8 Tbsp unsalted butter (cold, cubed)
- 1/2 cup brown sugar (packed) for the streusel
- 1/4 cup granulated sugar for the streusel
- 1 cup powdered sugar (sifted) for the icing
- 3 Tbsp heavy cream or milk for the icing
Instructions
- Prepare the streusel filling by mixing flour, brown sugar, cinnamon, and salt. Work in cold butter until clumps form, then refrigerate.
- Preheat oven to 400°F (200°C) and line baking sheets.
- In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt until combined.
- Cream cold butter with both sugars in a stand mixer until smooth. Add egg and vanilla; blend well.
