  • 1.5 lbs beef chuck, cut into 1.5-inch cubes
  • 2 tbsp vegetable oil
  • 1 large yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • 1 cup jasmine rice
  • 4 garlic naan

Instructions

  1. Season the beef with salt and pepper. In a heavy-bottomed pot, heat vegetable oil over medium-high heat and brown the beef on all sides. Remove from pot.
  2. In the same pot, sauté onions until translucent; add garlic and ginger, cooking until fragrant.
  3. Stir in curry paste and turmeric; cook for another minute.
  4. Add coconut milk, broth, browned beef, brown sugar, and lime juice. Bring to a simmer.
  5. Cover and braise on low heat for about 2 hours until the beef is tender.
  6. Cook jasmine rice according to package instructions while the beef simmers.
  7. Warm garlic naan just before serving.
  8. Serve the beef over rice with naan on the side, garnished with fresh herbs.
