  • 2 lbs beef chuck roast
  • 1 tbsp coconut oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Fresh parsley (for garnish)

Instructions

  1. In a Dutch oven, heat coconut oil over medium-high heat. Sear beef chunks until browned on all sides, about 4–5 minutes per side. Remove and set aside.
  2. Add chopped onion to the pot; cook until translucent (about 5 minutes). Stir in minced garlic and grated ginger, cooking for an additional minute.
  3. Add spices (curry powder, turmeric, cumin, paprika, cayenne) and tomato paste; stir for about 30 seconds to toast spices.
  4. Return beef to the pot; add coconut milk and beef broth, stirring well. Bring to a boil then reduce heat to low.
  5. Cover and simmer for about 2–3 hours until the beef is tender enough to shred with a fork.
  6. Serve over steamed rice and garnish with fresh parsley.
